Blanc de Blancs

Tasting Note

SINGLE VINEYARD · LONG CHARMAT METHOD SINGLE VINEYARD

Golden, with medium-intensity greenish highlights and great movement produced by its thin and persistent bubbles that form a crown. Intense tropical fruit, vanilla and honey aromas, with green apple and citric touches on a yeast bottom, intensely released by bubbles. Its way along the mouth is wide, intense, well structured and unctuous, with lots of fruits and a hint of honey, which results in a fresh and citric ending that invites us to drink it again.

TECHNICAL FILE

»Grapes: 100% Chardonnay.

» Vineyards location: Tupungato, Valle de Uco, Mendoza, Argentina.

» Altitude: 1,100 m.a.s.l., at the foot of the Andes Mountains.

» Harvest: Hand harvest on February, in 17 kg plastic boxes.

» 1st Fermentation: Seeded with selected French yeasts at low temperature to obtain delicate primary aromas.

» 2nd Fermentation: A blend of a two-year Chardonnay with fermentation in small stainless steel tanks. Three months in contact with the dregs of selected yeasts result in its aromatic complexity and structure in the mouth.

» Dosage: Extra Brut (7 g/L residual sugar).

» Rest: After the bottling process, it remains for 60 days in our wine cellar in order to harmonize.

» Winemaker: Lic. Romina Carparelli.

» Branding: Use of the Art nouveau décor, typical of Buenos Aires in 1920. Its vintage inspiration celebrates the Parisian Belle Époque.
